老实说:我曾经担心制作意大利面南瓜。I typically choose a brown rice pasta to accompany my tomato-based sauces, and I thought making a spaghetti squash seemed like too much work. (Spoiler alert: I was wrong.)

I finally decided to give it a try and accompany it with my hearty sun-dried tomato sauce and I was not let down.  I was so excited with my decision to finally make spaghetti squash, I was going around asking everyone that would listen, “Have you tried spaghetti squash?”(Well, have you?!)

It couldn’t be an easier dish to prepare, and it’s even more delicious when it’s paired with my sun-dried tomato sauce. Sun-dried tomatoes—my secret weapon when it comes to sauces—add a lot of depth and warmth to the flavor of a dish.

This is the perfect, comforting meal as the temperatures outside begin to get chillier. Plus, there are all the nutritional benefits you’ll be getting thanks to the vitamins and minerals found in the oh-so-healthy ingredients.

Now let’s get started! You’ll need a food processor or high-speed blender, a baking sheet, and a silicone mat and/or parchment paper to create this delectable entree, which serves four.

Spaghetti Squash with Sun-Dried Tomato Sauce

1 large spaghetti squash

Pinch of sea salt

¾ cup cashews (soaked for approximately 30 minutes)

3 tablespoons nutritional yeast

2 cloves minced garlic

3 tablespoons sun-dried tomatoes (oil-free, soaked for a minimum of 5 minutes)

INSTRUCTIONS:

  1. Preheat oven to 400 degrees and line a baking sheet with the non-stick parchment paper or silicone mat.  Slice spaghetti squash in half, vertically, or lengthwise. Using a spoon, remove all seeds.
  2. When the oven is preheated, sprinkle the interior of the squash with a pinch of sea salt and place face down on the baking sheet. Bake for 40 minutes (a knife should easily pierce the squash), then remove and set aside.
  3. While the squash is baking, prepare the sauce by adding all the ingredients into a food processor with the exception of the water. Gradually add the water while processing. The consistency should be slightly chunky, but if you prefer a creamier sauce, process longer on high. 留出。
  4. Flip the squash over and use a fork to scrape out the noodles.
  5. Top with the sun-dried tomato sauce, enjoy, and tell all your friends.
