Steam roasting is my favorite way to cook veggies. It delivers soft, moist vegetables every time with a hint of delicious caramelization. Let’s get our carrot on!

Steam-Roasted Purple Carrots Recipe

  • 1 bag organic rainbow baby carrots (12 oz.)

PREPARATION DIRECTIONS:
Pre-heat your oven to 350 degrees F. I started by removing the orange carrots, but you can leave them in if you like. I was aiming for a completely purple dish. The pale yellow carrots can remain because they end up soaking up the purple color. Cut the larger carrots as needed to match the size of the smallest carrots for an even roast.

Any type of onion will do. My first choice would be shallots cut into large strips, but I happened to have diced purple onions in the fridge, so that’s what I used. For the cilantro, pull all the leaves off the stems, then bunch them up tightly with your fingers before coarsely chopping. This helps bruise the leaves, which imparts more flavor. Toss the carrots, onion, and cilantro into your baking dish.

Squeeze half a lime on top. Drizzle with olive oil. Add the seasonings and get creative here. In my opinion, you just can’t over-season carrots! The seaweed seasoning is perfect because it contains some lemon, which adds a bit more zest. Lemon pepper would be great in this recipe, too.

Give everything a stir, then add just enough water to cover the bottom of the baking dish. 盖子。Make sure your lid is a little bit loose. Or, if you use tin foil, leave a small vent. If your baking dish happens to have a tight-fitting lid, you can forgo the addition of water since the veggies will create their own steam.

STEAM-ROASTING DIRECTIONS:
Cook this dish for 1 hour total. After 40 minutes, remove the cover, stir, and check the amount of evaporation. If there is still water in the pan, keep the cover off for the remaining cook time. This will allow the remaining water to cook off and caramelization to occur. If most of the water has already evaporated, you can go ahead and put the lid back on to retain moisture during the remainder of roasting time.
